A Typical Night's Schedule


Weekly purchase:
15lbs of bread flour
10 Lemon/Lime water (15 if iced tea is being served)
Bananas: 2 bunches
2 large boxes of Salad
Salad dressings if not home made


Wednesday Schedule
11am to 1pm Start the dough, set out sun tea.  Two bags of tea/jar, and I usually do two jars (when its above 60 outside, otherwise omit).  Bread dough - I use the basic recipe to mix up 15 lbs of flour or 3x the basic recipe, not working so hard to fully incorporate the all flour exhaustively.  Dough can be started up to 24 hours earlier.
2pm Turn the dough about and completely work in the flour that had not been worked in from the bottom of pot.
3:30 – 4pm make loaves to rise, preheat convection oven. Each batch makes 6-7 large table loaves.  Each full sheet can hold six loaves.  Set full sheet pans on cooling cart to rise.
4:30 – 5 preheat convection oven, oil (or egg white) loaves and slash, and put in convection oven when to temperature. 
3:30 – 4 begin prep work and cooking for the evening.
