Vinaigrette

Vinaigrette

Makes: 3/4 cup
Time: 5 minutes

1/2 cup extra virgin olive oil
3 T of good wine vinegar
salt & pepper
1 large shallot (1oz), chopped

combine all ingredients except the shallot in a blender until creamy emulsion. Taste and add vinegar a teaspoon at a time until the balance tastes right.  Then add the shallot and blend until minced.

The shallot was omitted.
